Quinoa Salad

This salad comes from one of my students.
1 cup Quinoa, cooked
2 small tomatoes, diced
1 un-waxed cucumber, seeded with skin on
1/2 red onion, chopped
1/3 cup cilantro, chopped
1 yellow pepper, diced
1 can black beans, low sodium and rinsed
1 bag spring greens
1 Tbsp Gogi berries
2 Tbsp Olive oil
Juice of 4 limes
Sea Salt and Pepper to taste
1/2 tsp turmeric

Combine all ingredients in salad bowl, except Quinoa
Once mixed and ingredients have mingled, add warm Quinoa.
